Pan-Seared Cod with Basil Sauce

Ingredients
¼ cup chopped fresh basil
¼ cup low-sodium, fat-free chicken stock
2 tablespoons grated fresh parmesan cheese
4 teaspoons extravirgin olive oil
1 teaspoon salt, divided
2 garlic cloves, minced
4 cod fillets (6 oz.)
¼ teaspoon freshly ground black pepper

Serve the fish fillet seasoned with fresh basil, parmesan cheese and garlic.
Combine basil, broth, cheese, butter, 1/2 teaspoon salt, and garlic in a small bowl.Sprinkle the fish with the remaining 1/2 teaspoon salt and pepper. Preheat a large nonstick skillet greased with cooking spray over medium-high heat. Add the fish; cook for 5 minutes on each side, or until the fish flakes easily when pricked with a fork. Serve the fish with a sprinkle of basil mixture.
