Ingredients

8 skinless chicken drumsticks
½ cup whole buttermilk
2 tablespoons grated onion
1 tablespoon grated garlic
Cooking Spray
¼ teaspoon black pepper
⅛ a teaspoon of salt
¾ cup panko (Japanese breadcrumbs)
1 oz grated parmesan cheese (about 1/4 cup)
2 tablespoons chopped fresh green onions
2 tablespoons canola mayonnaise
2 tablespoons plain Greek yogurt, no fat
1 ½ teaspoons honey
1 ½ teaspoons yellow mustard
½ teaspoon Dijon mustard

Chicken drumsticks can also be served with a light ranch dressing. Here's a quick tip for peeling your shins: Remove the skin from the fleshy part of the lower leg. Peel the skin with a paper towel and pull to the edge of the bone.
Using a paring knife, make 3 incisions in the fleshiest part of each shin. Put buttermilk, onion, garlic, and drumsticks in a large zippered plastic bag; refrigerate for 1 hour.Preheat the oven to 425 degrees.Line the jelly roll pan; brush the pan with cooking spray. Remove the shins from the bag; drain the marinade. Sprinkle the shins with pepper and salt. Combine panko, cheese and green onions in a shallow bowl. Roll each drumstick in the breadcrumbs mixture. Arrange the shins in a single layer on a wire rack; lightly brush them with cooking spray. Bake the drumsticks at 425 ° C for 30 minutes or until the chicken is cooked through.Combine mayonnaise and other ingredients in a small bowl. Serve the sauce with the chicken.
