Peach and Brie Quesadillas with Lime-Honey Dipping Sauce

Ingredients
Sauce:
2 tablespoons honey
2 teaspoons fresh lime juice
½ teaspoon grated lime zest
Quesadillas:
1 cup thinly sliced hard ripe peaches, skinned (about 2 large)
1 tablespoon chopped fresh green onion
1 teaspoon brown sugar
3 ounces brie cheese, thinly sliced
4 (8-inch) low-fat flour tortillas
Cooking Spray
Green onion strips (optional)

This intriguing Mexican dish has a savory-sweet taste. Ripe but firm peaches are best; if they are too soft, they will leave the tortillas soggy.
To make the sauce, combine the first 3 ingredients, stirring with a whisk; set aside.To make the quesadillas, combine the peaches, 1 tablespoon green onions, and sugar, stirring gently to coat. Preheat a large nonstick skillet over medium-high heat. Place a quarter of the cheese and a quarter of the peach mixture on half of each tortilla; fold the tortillas in half. Brush the mold with cooking spray. Add 2 quesadillas to the pan; cook for 2 minutes on each side, or until the tortillas are browned and crisp. Remove from the mold; keep warm. Repeat with the remaining quesadillas. Cut each quesadilla into 3 slices; serve with the sauce. Garnish with green onion strips if desired.
