Peach-Berry Crumble

Ingredients
3 cups fresh peach slices (about 3 medium)
2 cups fresh blackberries
1 large egg
1 large egg yolk
1 cup sugar
¾ cup all-purpose flour
½ cup plain oatmeal
¼ teaspoon kosher salt
½ cup melted butter
Vanilla ice cream

We love this recipe because it's simple enough for a busy weeknight cook; when you're serving dinner, put the crumble in the oven and it'll be ready in about 40 minutes. Blueberries or raspberries can be replaced with blackberries.
Preheat the oven to 375 degrees. Place the first 2 ingredients in an 11-inch x 7-inch (or 2-square-inch) baking dish. Whisk the egg, egg yolk, and the next 4 ingredients with a fork until the mixture resembles coarse flour. Sprinkle the fruit; top with a drizzle of melted butter. Bake for 40-45 minutes or until light brown and bubbles form. Let stand for 10 minutes; serve warm with ice cream.
