Peanut Chicken Soba Salad

Ingredients
2 cups water
2 skinless and boneless chicken breast halves (6 oz each)
4 black pepper peas
1 bay leaf
1 tablespoon rice vinegar
2 tablespoons toasted peanut butter
2 teaspoons low-sodium soy sauce
1 teaspoon honey
1 teaspoon garlic chili sauce (such as Lee Kum Ki)
½ teaspoon salt
2 cups cooked soba noodles (about 4 ounces raw)
1 cup grated carrot
½ cup green onion, thinly sliced
¼ cup chopped red onion
¼ cup chopped fresh basil
4 teaspoons chopped unsalted peanuts, dry-fried
Lime wedges (optional)
To make
It only takes you about 15 minutes to prepare the chicken and noodles for this Asian salad. If you don't have much time, replace it with fried chicken or leftover boiled chicken, or buy pre-chopped carrots from the grocery department of your supermarket.
Combine the first 4 ingredients in a medium saucepan; bring to a boil. Cover, remove from heat and let stand for 15 minutes or until the chicken is cooked through. Remove the chicken from the pan, discard the peppercorns, bay leaf, and cooking liquid. Chop the chicken; place in a large bowl.Combine the vinegar and the following 5 ingredients (vinegar with salt added), stirring with a whisk. Pour over the chicken; let stand for 5 minutes. Add the soba noodles and the next 4 ingredients (noodles with chopped basil) to the chicken mixture and mix well. Sprinkle with peanuts. Garnish with lime wedges if desired.
