Pork with Lemon-Caper Sauce

Ingredients
⅓ cup all-purpose flour
⅛ a teaspoon of salt
3 tablespoons Italian-seasoned breadcrumbs
3 tablespoons chopped fresh parmesan cheese
¼ teaspoon black pepper
1 large egg white, lightly beaten
4 boneless pork chops (4 ounces each) (about 1/2 inch thick)
Cooking Spray
2 teaspoons olive oil
½ cup low-sodium, fat-free chicken stock
1 tablespoon dry white wine
¼ teaspoon grated lemon zest
1 tablespoon fresh lemon juice
2 teaspoons capers, washed and dried

Pork chops in light breading are prepared quickly and turn out delicious for dinner on a weeknight. Serve with orzo and green beans.
Combine flour and salt in a shallow bowl. Place the breadcrumbs, cheese, and pepper in a shallow dish; place the egg white in another shallow dish. Roll pork in flour mixture, dip in egg white and roll in breadcrumbs. Brush the pork with cooking spray.Heat the oil in a large nonstick skillet over medium-high heat. Add the pork to the skillet; cook for 4 minutes on each side or until tender. Remove from the mold; keep warm. Add the broth and other ingredients to the pan, scraping off the pan so that the pieces are not browned. Cook for 2 minutes or until reduced to 1/4 cup (about 2 minutes). Serve with pork.
