Prawns with Pernod

Ingredients
1 cup dry white wine
½ cup minced shallots
2 tablespoons Pernod (liqueur with liquorice flavor)
2 tablespoons fresh lemon juice
1 tablespoon butter or a stick of margarine
2 tablespoons chopped fresh or 2 teaspoons dried parsley
1 tablespoon chopped fresh or 1 teaspoon dried tarragon
½ teaspoon freshly ground black pepper
2 garlic cloves, minced
32 large prawns, peeled and pitted (about 1/2 pound)
Cooking Spray
1 cup chopped tomatoes, pitted
8 (1-ounce) slices of toasted French bread

The licorice flavor of Pernod combined with shrimp is an unexpected combination, but we found it excellent. Some unique liqueurs, such as Pernod, are sold in small bottles; this is a convenient way to try unfamiliar varieties without spending money on a large bottle.
Combine the wine and shallots in a small saucepan; bring to a boil and cook until reduced to 1/2 cup (about 15 minutes). Remove from heat; add the pernod and the following 6 ingredients (pernod with garlic).Preheat the grill.Place the prawns in a single layer on a baking dish greased with cooking spray and pour the pernod mixture over the prawns. Bake for 5 minutes or until the shrimp is cooked through. Sprinkle the prawns with tomatoes and serve with French bread.
