Quick and Easy Pork Fried Rice

Ingredients
2 sachets of pre-cooked 8.5 oz basmati rice
¼ cup low-sodium soy sauce
1 tablespoon garlic chili sauce
1 ½ teaspoons hoisin sauce
2 tablespoons peanut butter, divided
1 pound boneless pork shoulder (boston ham), trimmed and thinly sliced into 1-inch-thick pieces
1 large egg, lightly beaten
1 ½ cups chopped red bell pepper
1 cup frozen inshell edamame

Forget about takeout! We love quick and easy rice with fried pork. The pork is very tender, and we like the sweet and sour taste of the sauce.
Preheat the rice according to the instructions on the package.Combine soy sauce, garlic chili sauce and hoisin in a bowl. Preheat a wok or large skillet over high heat. Add 1 tablespoon butter; stir to coat. Add the pork to the pan in a single layer; cook for 2 minutes, without stirring. Saute the pork for 4 minutes or until tender. Add the pork to the soy sauce mixture; stir to coat.Add the egg to the pan; cook for 45 seconds or until tender. Remove the egg from the pan; cut into small pieces.Add the remaining 1 tablespoon of oil to the pan; stir to coat. Add the bell pepper, edamame, and 1/2 cup onion; saute, stirring, for 1 minute. Add the rice; saute for 2 minutes, stirring occasionally. Add the pork and soy sauce mixture; cook for 1 minute, stirring constantly. Sprinkle the rice mixture with the egg and remaining onion.
