Quick Rotini with Sausage and Tomato Sauce

Ingredients
8 oz raw rotini
Cooking Spray
3 (4 oz) pieces of Italian sweet turkey sausage, uncoated
1 ½ cups finely chopped arugula, divided
1 cup chopped onion
1 tablespoon chopped fresh oregano
½ teaspoon ground red pepper flakes
4 garlic cloves, thinly sliced
2 cups unsalted canned chopped tomatoes
½ teaspoon sugar
½ teaspoon freshly ground black pepper
¼ teaspoon kosher salt
4 teaspoons grated parmesan cheese
To make
If you want, you can replace arugula with spinach. To reduce the heat, reduce the amount of crushed red pepper or do not add it.
Bring a large pot of water to a boil. Add the pasta; cook for 7 minutes or until al dente. Tip the pasta into a colander over the bowl, reserving 1 cup of the cooking liquid.Preheat a large skillet over medium-high heat. Brush the mold with cooking spray. Add the sausage to the pan; cook for 5 minutes or until it is lightly browned, stirring until it crumbles. Add 1 cup arugula, onion, oregano, crushed red pepper and garlic; cook for 2 minutes, stirring frequently.Add the remaining 1 cup of cooking liquid, tomatoes, sugar, black pepper, and salt to the pan; bring to a boil. Add the pasta; cook for 2 minutes. Add the remaining 1/2 cup arugula. Spread the pasta mixture into 4 shallow bowls; top with a sprinkle of parmesan cheese.
