Raspberry-Almond Jam

Ingredients
5 cups fresh raspberries
2 cups sugar
½ cup amaretto (almond-flavored liqueur)
2 tablespoons fresh lime juice
¼ teaspoon salt
¼ teaspoon almond extract

This is a bright fruit jam, a delicious filling for toast, it is also good to add to oatmeal or spread on ice cream for a quick parfait.
Combine the first 4 ingredients in a large saucepan; bring to a boil. Reduce the heat and simmer uncovered for 40 minutes or until thickened, stirring frequently. Remove from heat; add salt and extract. Cool; pour into airtight containers.Note: Store raspberry and almond jam in the refrigerator in airtight containers for up to six weeks.
