Ingredients
1 pack of 10-to 12-ounce frozen brown rice
½ cup canned black beans, washed and dried
½ cup salsa
2 tablespoons grated cheddar cheese or mexican mixture
2 tablespoons ready-made guacamole
Hot sauce optional

This hearty bowl of rice and beans can be made with ingredients you probably already have in your pantry. This hearty, protein-rich dish is sure to leave you feeling full without spending any extra money. Prepare it in advance and pack a couple of containers to prepare several dishes in advance.
Reheat the rice according to the package instructions for 2 to 4 minutes.Combine the beans and salsa in a medium bowl suitable for a microwave. Partially cover and cook on high until warmed through, about 1 minute. Add 1 cup of rice, partially cover, and cook until tender, about 1 minute longer. (Check in the middle.) Top with cheese and guacamole. Add hot sauce if desired.
