Salmon with Walnut-Avocado Guacamole

Ingredients

4 skinned salmon fillets (6 oz.)
1 teaspoon kosher salt, divided
½ teaspoon black pepper, divided
Cooking Spray

3 tablespoons extra-virgin olive oil, divided
1 ½ tablespoons fresh lime juice
1 peeled ripe avocado
5 cups young arugula
¾ cup thinly sliced radishes

To make

Include this hearty dish in the menu for the evening of the week. The dish is ready in less than 20 minutes.
Preheat a grill pan over medium-high heat. Sprinkle the salmon with 1/4 teaspoon salt and 1/4 teaspoon pepper. Brush the mold with cooking spray. Place the salmon skin side down in the pan; cook for 5 minutes. Turn over and cook for 3 minutes to prepare medium-deep-fried dishes or until desired degree of browning.Combine 1/2 teaspoon salt, remaining 1/4 teaspoon pepper, 1/4 cup walnuts, 2 1/2 tablespoons oil, juice, and avocado in a food processor. Whisk until almost smooth.Put the remaining 1/4 teaspoon salt, arugula, and radishes in a large bowl. Add the remaining 1 1/2 teaspoons of butter; stir to combine. Divide the salad into 4 plates. Top with salmon and guacamole. Chop the remaining walnuts and sprinkle on top.
