Seared Tilapia with Spinach and White Bean Orzo

Ingredients

¾ cup raw orzo paste
4 tilapia fillets (6 oz.)
½ teaspoon salt, divided
½ teaspoon black pepper, divided
1 ½ tablespoons olive oil, divided
½ teaspoon ground red pepper flakes
3 garlic cloves, minced
1 pack (5 oz) fresh spinach
1 cup halved grape tomatoes
1 can unsalted cannellini beans (15 oz.)
4 lemon slices (optional)

To make

Feel free to substitute tilapia for other organic fish, such as flounder or red bass, in this versatile dish.
Prepare the orzo according to the instructions on the package, without adding salt or fat.While the pasta is cooking, sprinkle the fish with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Preheat a large nonstick skillet over medium-high heat. Add 1 tablespoon of oil to the skillet; stir to coat. Add the fish to the pan; cook for 3 minutes on each side or until desired browning. Remove the fish from the pan; keep warm.Add the remaining 1 1/2 teaspoons of oil to the skillet. Add the crushed red pepper and garlic; simmer for 30 seconds. Add the spinach; simmer for 1 minute or just until the spinach wilts. Add tomatoes, beans, remaining 1/4 teaspoon salt, and 1/4 teaspoon black pepper; cook for 1 minute or just until warmed through. Remove the pan from the heat. Add the pasta to the pan; stir to coat. Spread the pasta mixture over 4 plates and top with the fish fillets. Serve with lemon wedges if desired.
