Skillet Fillets with Cilantro Butter

Ingredients
¼ teaspoon salt
¼ teaspoon ground cumin
⅛ a teaspoon of ground red pepper
4 tilapia fillets (6 oz.)
Cooking Spray
1 lemon, cut into quarters
2 tablespoons softened butter
2 tablespoons finely chopped fresh cilantro
½ teaspoon grated lemon zest
¼ teaspoon paprika
⅛ a teaspoon of salt
To make
Any low-fat white fish, such as cod, flounder, or orange rufus, will also be delicious instead of tilapia. Serve this bright-tasting fillet with sauteed spinach or green salad.
Combine the first 3 ingredients; sprinkle the fish on both sides. Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Brush the fish on both sides with cooking spray; transfer to the skillet. Cook for 3 minutes on each side, or until the fish flakes easily when tested with a fork, or until the desired degree of roasting is achieved. Place the fish on a serving platter; squeeze out a quarter lemon on the fish.Put the butter and remaining ingredients in a small bowl; mix until smooth. Serve with fish.
