Sonoran Flat Enchiladas

Ingredients
3 cups Masa Harina
1 beaten egg
1 tablespoon baking powder
1 teaspoon salt
1 ½ cups warm water, adjust amount
1 medium white onion, cut into small cubes
1 pound grated cheddar cheese
1 can olives, black or green, optional
2 green onion stalks, diced, optional
1 can enchilada sauce, 28 oz or make your own
1 cup vegetable oil for frying

Flat Enchilidae are typical of Southern Arizona, especially Tucson. They are made from Masa (corn flour). They look like pancakes. They are fried and then drizzled with enchilada sauce, garnished with grated cheese, diced onions, chopped lettuce leaves and diced green onions. This is a home-made Mexican dish.
Grate the cheese, cut the onion into small cubes, cut the lettuce leaves into thin slices, cut the olives, cut the green onions - set aside.Combine the masa harina, salt, baking powder, and 3/4 cup grated cheese. Beat the egg. Add the beaten egg and water to the dry ingredients. (Don't add all the water at once - add in small portions) Mix the masa with a spoon or your hands, like pasta dough. Be careful not to knead too much. Knead until the mixture is smooth, firm and slightly moist. Add water if the mixture is too dry, or add a little more dry masa if the mixture is too wet. My mother mixed masa with her hands.Divide the masa dough into small circles 3/4-inch thick. You may be able to make 12 round balls of dough. Using two sheets of waxed paper, place one circle of masa dough between the two sheets. Flatten the dough for masa balls with the bottom of a small plate-saucer. Flatten the dough ball to about 1/4 inch in diameter (4 to 5 inches).Heat about 1/8 inch of oil in a large skillet and heat to medium-high 375 degrees Fahrenheit.Saute the masa pancakes until the bottom is golden brown, about 2 minutes on each side. Turn the pancake upside down and fry on the opposite side. Add oil if necessary.Once all the masa dough pancakes are browned, dip each pancake in the enchilada sauce and place them on the bottom of a 9 x 12 cm baking dish. Once the bottom is covered, sprinkle the enchiladas with grated cheese. Put a second layer on top of the first layer. Sprinkle with cheese and half of the diced onion. Add more or less onions depending on your preference.Bake in the oven at 375 degrees Fahrenheit until the cheese melts and the sauce begins to bubble.Serve the enchiladas in a stack, garnished with white and green onions and chopped lettuce leaves.Enjoy homemade Mexican dishes.
