Garlic bread is the main dish on Italian evenings. Instead of buying frozen bread or spending all day baking bread in your kitchen, split the difference with this simple recipe.Pasquale Usorio, owner of San Francisco's Pasquale's Pizzeria for almost four decades, makes crunchy, garlic-infused bread that is admired by regulars.
In a small bowl, combine 1/2 cup olive oil, 3 tablespoons minced or pressed garlic, and 3 tablespoons chopped parsley. Cut two 1/2-pound loaves of sourdough French bread crosswise into thirds, then cut each third in half horizontally. Generously spread the garlic mixture or spoon over the cut side of each piece. Sprinkle each slice with about 1/2 tablespoon of grated parmesan cheese. Place the pieces (cheese side up) on baking sheets and bake 8 inches from the heat until they are lightly browned, 3 to 4 minutes each. Serve warm.Nutritional analysis of each bite.
