Split Pea Hummus

1 cup dried green peas
1 clove garlic
½ teaspoon salt, divided
¼ cup olive oil
1 tablespoon lemon juice
¼ teaspoon ground cumin

This fun southern version of traditional hummus is inexpensive and delicious. Serve it as an appetizer with fresh vegetables and pita chips.
Sort the peas and wash them. Bring the garlic and 3 cups of water to a boil in a medium saucepan. Add the peas; bring to a boil. Cover, reduce heat and simmer 25 minutes. Add 1/4 teaspoon salt; cook for 15 minutes or until tender. Drain the water.Combine the peas, olive oil, the next 2 ingredients, and the remaining 1/4 teaspoon salt in a food processor; beat 5-7 times or until smooth, scraping off the sides if necessary. Serve at room temperature.
