Sweet-Heat Pickled Okra

Ingredients

2 ½ pounds small fresh okra
7 (1 pc.) hot sterilized cans for canning
3 red Fresno chili Peppers, sliced 1/4-inch thick
7 teaspoons finely chopped garlic cloves (from 10 garlic cloves)
2 tablespoons plus 1 tsp dill seeds
1 tablespoon plus 1/2 tsp mustard seeds
4 cups white vinegar (5% acidity)
4 cups water
¾ cup granulated sugar
½ cup kosher salt

To be honest, we've never found a pickled okra that we liked so much as with this simple homemade recipe. With a wonderful crunch and a fantastic balance of flavor, sweetness, and warmed-up, these pickled pods will make a nice addition to any sausage table or bloody Mary bar. If okra isn't your favorite vegetable, this recipe goes equally well with fresh green beans. If you want to increase the heat, just add more pepper.
Pack okra in hot, sterilized jars, filling 1/2 inch from the top (alternate tips and stems to fit more in each jar, 20-25 okra per jar). Put 3-4 chili slices, 1 teaspoon minced garlic, 1 teaspoon dill seeds, and 1/2 teaspoon mustard seeds in each jar. Combine vinegar, water, sugar, and salt in a large saucepan; bring to a boil over medium-high heat. Pour the mixture over the okra, leaving a 1/2-inch gap. Cook as directed for 10 minutes.
