Tomato Chow-Chow

Ingredients
1 ½ cups white vinegar
1 cup sugar
12 black pepper peas
6 whole types of allspice
1 (3-inch) cinnamon stick
4 cups chopped tomatoes, unseeded (about 1/2 pound)
2 cups chopped green cabbage
1 cup chopped green bell pepper
1 cup chopped onion
½ cup chopped celery
¾ teaspoon salt
1 serrano chili, minced
To make
Chow chow is a traditional southern dish of summer vegetables mixed with vinegar. Serve with beans, green peas, ham, grilled chicken or burgers. Or try it on grilled turkey sausages with a side dish of baked chips. This chow chow will keep in the refrigerator for up to three weeks; it gets tastier over time.
Combine the first 5 ingredients in a large saucepan; bring to a boil. Cook for 1 minute. Add tomatoes and other ingredients; bring to a boil. Cook for 20 minutes, stirring occasionally. Cool to room temperature; discard the cinnamon. Transfer the tomato mixture to a medium bowl; cover and refrigerate.
