Wild Rice with Bacon and Fennel

Ingredients
1 ⅓ cups raw wild rice
4 slices of bacon
1 large fennel bulb, thinly sliced
1 large onion, sliced into thin slices
2 garlic cloves, minced
½ cup low-sodium, fat-free chicken stock
⅓ cup of golden raisins
¼ teaspoon salt
⅛ a teaspoon of pepper
¼ cup chopped fresh fennel or parsley leaves
1 tablespoon white wine vinegar
½ cup chopped toasted walnuts

Wild rice with bacon and fennel is an earthy side dish that goes well with rustic roast pork. Make sure to add wild rice with bacon and fennel to your fall or winter menu.
Prepare the wild rice as directed on the package; strain.Meanwhile, saute the bacon in a large nonstick skillet over medium-high heat for 7-8 minutes or until crisp; dry with paper towels, leaving 1 tablespoon of the filling in the pan. Slice the bacon.Saute the fennel bulb and onion in the hot sauce over medium-high heat for 5 minutes or until softened. Add garlic; simmer for 1 minute. Add the broth and the next 3 ingredients; bring to a boil. Reduce heat to medium-low; cover and simmer 8 minutes or until tender. Add the rice and bacon; cook, stirring frequently, for 3 minutes.Transfer to a large serving bowl. Add the fennel leaves and vinegar. Sprinkle with walnuts before serving.
