1 large onion, diced
1 large green bell pepper, diced
1 pound smoked sausage, cut into 1/4-inch thick slices
1 tablespoon olive oil
4 cups chopped boiled chicken
3 cups raw long grain rice
2 cans french onion soup (10 1/2-ounce cans), undiluted
1 can chicken stock (14 1/2-ounce cans)
1 can beef broth (14 1/2 ounces)
2-3 teaspoons creole seasoning
2-3 teaspoons hot sauce
Garnish with fresh coriander sprigs

To make

Saute the first 3 ingredients in the preheated oil in a roasting pan for 4-5 minutes or until the sausage is lightly browned. Add the chicken and the following 6 ingredients.Bake under the lid at 350 ° for 40 minutes, stirring after 30 minutes. Decorate if desired.
