Almost Meatless Sloppy Joes

Ingredients

2 tablespoons olive oil
½ cup finely chopped white onion
1 tablespoon minced garlic
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
6 oz sirloin
½ cup grated carrots
2 teaspoons chili powder
1 teaspoon brown sugar
½ teaspoon dried oregano
¼ teaspoon ground red pepper flakes
2 cups canned chopped tomatoes
1 can of low-sodium red beans (15.5 oz), washed, dried, and divided
4 whole-grain sandwich rolls (2 ounces each), cut and toasted
4 1/4-inch thick red onion slices, cut into rings

To make


Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, salt, black pepper, and beef to the pan; cook for 5 minutes or until the meat is browned and the vegetables are tender, stirring occasionally to allow the beef to crumble.Add the carrots, chili powder, sugar, oregano, and red pepper flakes; cook for 2 minutes, stirring occasionally. Add tomatoes; bring to a boil. Reduce the heat to medium; cook for 10 minutes or until the carrots are thickened and tender, stirring occasionally.Mash 1 cup of beans partially with a fork or potato masher. Add the mashed beans and remaining whole beans to the pan; cook for 1 minute or until fully warmed through. Spoon 1 cup of the bean mixture onto the bottom half of each roll; top each serving with a slice of red onion and the top half of the roll.
