Apricot Pork Chops

Ingredients

4 (4 oz) boneless pork loin chops
¼ cup chopped onion
¼ cup apricot jam
1 tablespoon low-sodium soy sauce
2 teaspoons bottled minced garlic
¼ teaspoon salt
¼ cup chopped green onion
To make
Serve these spicy pork chops with apricot sauce, baked potatoes, and sugar peas for a hearty weeknight dinner. Instead of apricot jam, you can use peach jam or orange jam.
Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the pork to the skillet; cook for 6 minutes on each side or until tender. Remove from the mold; keep warm.Add the chopped onion to the pan; simmer for 4 minutes or until lightly browned. Add the canned food, soy sauce, garlic and salt; cook for 3 minutes or until thickened. Transfer the pork to the pan, turning it over to coat. Sprinkle with green onions.
