Apricot Streusel Bars


1 ½ cups oat flakes (not instant)
1 ½ cups all-purpose flour
1 cup light brown sugar
1 teaspoon cinnamon
½ teaspoon baking soda
½ teaspoon salt
2 sticks (1/2 pound) cold unsalted butter, cut into small pieces
1 teaspoon vanilla extract
¼ cup milk
1 ½ cups apricot jam
¾ cup chopped almonds

To make

Preheat the oven to 375°F. Brush a 9-by-13-inch baking dish with butter and lightly flour.Combine the oats, flour, sugar, cinnamon, baking soda, and salt in a food processor. Add the butter and vanilla extract and beat until the mixture resembles coarse flour. Add the milk; beat until the mixture is lumpy and slightly moist. (Add another tablespoon of milk if the mixture is too dry.)Set aside 1 cup of batter; roll out the remaining batter evenly in the pan. Bake until golden brown, 20 minutes.Spread the jam evenly over the hot dough; top with the remaining dough and almonds. Bake until golden and bubbly, 35 minutes. Cool on a wire rack and cut into chunks.
