1 tablespoon cornmeal
1 13.8-ounce can of chilled pizza dough
2 tablespoons signature pesto
½ cup (2 oz) grated partially low-fat mozzarella cheese
1 pack (9 oz) frozen artichoke hearts, thawed and dried
1 oz thinly sliced prosciutto
2 tablespoons grated parmesan cheese
1 ½ cups arugula leaves
1 ½ tablespoons fresh lemon juice

To make

Thanks to artichokes, arugula, pesto, prosciutto and parmesan, this pizza has an intense, addictive flavor. Go broke and try it with homemade pesto.
Set the oven grill to the lowest possible temperature. Preheat the oven to 500°C.Brush a baking sheet with cooking spray; sprinkle with cornmeal. Roll out the dough on the prepared baking sheet and roll out into a 14-inch x 10-inch rectangle. Spread the pesto evenly over the dough, leaving a 1/2-inch thick rim. Sprinkle the pesto with mozzarella cheese. Place the baking sheet on the bottom rack of the oven; bake at 500 ° C for 5 minutes. Remove the pizza from the oven.Coarsely chop the artichokes. Place the artichokes on the pizza; top with the sliced prosciutto. Sprinkle with parmesan cheese. Return the pizza to the bottom rack of the oven; bake for another 6 minutes or until the crust is lightly browned.Place the arugula in a bowl. Drizzle the arugula with the juice; mix gently. Sprinkle arugula mixture on the pizza. Cut the pizza into 4 rectangles (7 x 5 inches); cut each rectangle diagonally into 2 slices.
