Arugula and Mushroom Salad

Ingredients
1 tablespoon white wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons extra virgin olive oil
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 cup mushrooms, cut into quarters
6 ounces young arugula
1 tablespoon grated Parmigiano-Reggiano cheese
To make
Lemon sauce lightly wraps the arugula and mushroom salad. Prepare this side dish for your favorite pizza.
Combine the vinegar, lemon juice, olive oil, salt and pepper in a medium bowl, stirring with a whisk. Add the mushrooms and arugula; mix gently to coat. Top with grated Parmigiano Reggiano cheese.
