Asian Chicken Noodle Soup

Ingredients
1 tablespoon vegetable oil
1 tablespoon bottled minced garlic
1 tablespoon grated bottled ginger
2 peeled stalks of fresh lemongrass
2 cups water
2 cans of low-sodium, fat-free chicken stock (14 oz each)
1 pound chicken breasts, cut into small pieces
4 oz raw Angel Hair Paste
¼ cup chopped fresh cilantro
1 tablespoon fresh lime juice
½ teaspoon salt
2 thinly sliced green onions
1 red chili pepper, finely chopped
To make
Grated ginger and lemongrass add an international flavor to this traditional chicken noodle soup. Feel free to add extra veggies like mushrooms, peas, or carrots.
Heat the oil in a large nonstick skillet over medium-high heat. Add garlic, ginger and lemongrass; simmer for 3 minutes. Add water and stock; bring to a boil. Add the chicken and pasta; cook for 5 minutes or until the chicken is tender. Remove from heat; add remaining ingredients. Let stand for 5 minutes. Avoid lemongrass.
