Bacon and Broccoli Mac and Cheese

Ingredients
3 cups broccoli florets
8 oz raw rigatoni
1 tablespoon butter
1 ½ tablespoons all-purpose flour
1 ¼ cups low-fat milk 2%
2 ounces reduced-fat processed American cheese, cut into chunks
¼ cup green onion, thinly sliced
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 slices bacon, sliced in the center, sauteed and crumbled
2 ounces grated extra-spicy cheddar cheese (about 1/2 cup per pack)

This one-course dish will win over both adults and children. If you prefer, replace the broccoli with English peas or fresh spinach.
Cook the broccoli for 5 minutes or until it is crisp-tender; drain. Dry and keep warm. Cook the pasta in boiling water in a large saucepan for 8 minutes or until al dente; drain and keep warm. Dry the pan with paper towels and return to medium heat. Melt the butter in a large skillet. Sprinkle the melted butter with flour; cook for 1 minute, stirring constantly with a whisk. Gradually add the milk to the flour mixture in the pan and bring to a boil, stirring constantly with a whisk. Cook for 1 minute or until slightly thickened, then remove from heat. Add the American cheese; mix until smooth. Add the chopped green onions and the rest of the ingredients. Add broccoli and pasta; serve immediately.
