Bacon-and-Sage-Wrapped Chicken Breasts

Ingredients
8 boneless and skinless chicken breast halves cut off
Salt
16 sage leaves
8 thick slices of bacon
1 ½ tablespoons all-purpose flour
½ cup low-sodium chicken broth
¼ cup fresh lemon juice
To make
Preheat the oven to 400ºF. Lightly drizzle a 9-by-13-inch baking dish with cooking spray.Lightly sprinkle the chicken with salt and place 2 sage leaves on each half of the chicken breast. Wrap a slice of bacon around each piece of chicken and place the chicken pieces in a baking dish. Bake until the chicken is cooked through and the temperature inside reaches 165ºF on an instant-read thermometer, about 40 minutes.Transfer the chicken to a platter and cover loosely with foil to keep it warm. In a baking dish, remove the fat from the juices and pour them into a small saucepan. Place on medium-high heat and beat with flour until a paste forms, 1 minute. Pour in the broth and lemon juice and bring to a boil. Reduce the heat to medium and cook, whisking constantly, until the sauce is smooth and thickened, about 2 minutes. Remove from heat. Whisk all the juices that have accumulated on the dish into the sauce. Drizzle the sauce over the chicken and serve.
