Bacon-Wrapped Corn-on-the-Cob

Ingredients
1 tablespoon light brown sugar
2 teaspoons ancho chili powder
2 teaspoons ground cumin
½ teaspoon kosher salt
4 ears of fresh corn, peeled and cut in half crosswise
Cooking Spray
8 slices of bacon
1 medium lime, sliced

This grilled corn has it all: sweetness, spices and meat. This dish is perfect for a summer picnic with friends and family and goes well with other grilled dishes. Thickly sliced bacon is difficult to wrap around corn, so don't buy it. Before grilling, soak the toothpicks for 10 minutes to prevent them from burning quickly.
Preheat the grill or grill pan to medium heat (350 ° F to 400 °F). Combine the brown sugar, ground chili pepper, cumin and salt in a small bowl. Drizzle the corn slices with cooking spray; sprinkle everything with the brown sugar mixture. Wrap 1 slice of bacon around each slice of corn, secure with toothpicks if necessary.Place the prepared corn on a greased wire rack; saute uncovered, turning occasionally, until the bacon is crisp, about 5 minutes in total. Transfer to a plate, drizzle with lime wedges and garnish with coriander. Serve immediately.
