Bacon-Wrapped Grilled Dates with Brie

16 large pitted dates
2 ounces brie
6 slices of bacon

These delicious little bites are no ordinary snack. Be sure to use large dates, which are much easier to process and stuff than small ones, and bacon sliced in the center — thick slices of bacon will take too long to cook. If the date is split during the filling, just press it back down. They're best prepared warm, straight off the grill, but they're still good at room temperature.
Using the tip of a wooden spoon, gently increase the opening on each date to make it easier to fill. Gently sprinkle each date with about 1/2 teaspoon of cheese.Cut each slice of bacon crosswise into 3 pieces. (Save the remaining bacon slices for another use.) Wrap each date with 1 piece of bacon, making sure that the bacon completely envelops the date.Preheat the grill to medium heat (350 ° F to 400 °F). Place the dates on a grill rack greased with cooking spray; cook uncovered, turning occasionally, until the bacon is crisp and the cheese is warm, 6 to 8 minutes. Transfer the baked dates to a platter. Sprinkle with pistachios.
