Baked Eggs with Spinach and Tomatoes

Ingredients
Spray for cooking vegetables
6 tablespoons low-fat cheese spread with garlic and herbs (such as rondelet)
48 fresh spinach leaves, torn
6 large eggs
12 tablespoons pasta sauce in a jar
6 tablespoons halved
¾ teaspoon freshly ground pepper

Preheat the oven to 350 degrees. Brush 6 tins (6 to 8 ounces) with vegetable-based baking spray. Put 1 tablespoon of smeared cheese, 8 torn spinach leaves, 1 egg, 2 tablespoons of pasta sauce, 1 tablespoon in each mold put half and 1/8 tsp pepper. Place on a baking sheet. Bake for 20-25 minutes or until cooked through until desired firmness. Let stand for 5 minutes. Serve with toast.
