Baked Ham with Sticky Meyer Lemon-Spice Glaze

1 cooked ham half with drumstick or ham bones (6-7 pounds)
¾ cup light brown sugar
Finely chopped zest and juice of 5 medium Meyer lemons
1 ¼ teaspoons ground ginger

Be sure to buy ham without icing; it will dull the taste of our dish with the addition of citrus fruits.
Preheat the oven to 350 degrees. Cut the tough, skin-like skin off the ham (if it has any) and slice the fat and meat in cross strokes. Place the ham fat side up on a large baking dish and cover loosely with foil. Bake until the thickest part of the meat reaches 120 degrees, about 1 1/2 hours.Meanwhile, prepare the frosting: in a bowl, whisk together the sugar, zest, juice, and ginger until smooth.Open the ham and place it on the frosting pan. Bake the ham uncovered, drizzling the ham and stirring the glaze every 10 minutes, until the glaze turns into a thick, shiny syrup and the meat reaches 135-140 ° C, just 15-30 minutes.Let the ham sit for 5 minutes, then brush with icing and transfer to a cutting board. Scrape the remaining frosting into a small bowl. Cut the ham into chunks and sprinkle another spoonful of icing on top.Note: A nutritional analysis is provided for each serving.
