Banana Bread Pudding with Caramel Sauce


⅓ cup 1% low-fat milk
1 tablespoon dark brown sugar
⅛ a teaspoon of ground cinnamon
1 large egg
2 cups 1/2-inch-thick diced French bread (approximately 2 1-ounce slices)
Cooking Spray
½ cup mashed ripe banana (about 1 banana)
1 tablespoon granulated sugar
2 tablespoons low-fat caramel topping
Powdered sugar (optional)

To make

Try this recipe the next time you're left with a French loaf; the bread pudding texture is better with yesterday's baked bread. You can also use low-fat fudge instead of caramel sprinkles.
Combine the first 4 ingredients in a small bowl and whisk to combine. Place 1/2 cup bread cubes in each of 2 8-ounce tins smeared with cooking spray. Add 2 tablespoons of the milk mixture to each serving, and top with 1/4 cup of banana. Sprinkle each serving with 1 1/2 teaspoons granulated sugar. Repeat the procedure with the remaining bread and milk mixture. Chill for 30 minutes.Preheat the oven to 350 degrees.Bake at 350 ° C for 50 minutes or until cooked through. Add 1 tablespoon of the caramel sauce to each serving. If desired, sprinkle with powdered sugar.
