Wet walnuts:
1 cup sugar
1 cup heavy cream
½ cup chopped walnuts
Chocolate sauce:
1 cup heavy cream
1 tablespoon unsalted butter
½ teaspoon instant coffee granules
8 oz semisweet chocolate, chopped
¼ teaspoon vanilla extract
Pineapple sauce:
2 cups canned pineapple slices, peeled
½ cup sugar
1 teaspoon grated orange zest
1 teaspoon cornstarch
Strawberry sauce:
1 pound strawberries, sliced
¼ cup sugar
1 teaspoon grated orange zest
2 teaspoons cornstarch
Ice cream:
8 bananas
4 pints vanilla ice cream
1 cup heavy cream, whipped
16 maraschino cherries

Prepare the wet walnuts: Stir 1/4 cup water and sugar over medium-high heat until the sugar boils and dissolves. Simmer until the syrup turns a dark amber color, 6 minutes. Remove from heat; whisk in cream. Return to the heat and stir until smooth. Add the nuts and pour into a bowl; allow to cool.Prepare the chocolate sauce: heat the cream, butter, and coffee to a boil. Remove from heat. Add the chocolate; stir until smooth. Add vanilla; allow to cool.Make the pineapple sauce: Bring all the ingredients and 1/3 cup water to a boil over medium-high heat, stirring occasionally. Simmer uncovered for 30 minutes, until they thicken. Grind in a food processor until smooth. Pour into a bowl; allow to cool.Prepare the strawberry sauce: Cook all the ingredients in 1/4 cup water over medium heat, stirring, until the strawberries start to fall apart, 10 minutes. Pour into a bowl; allow to cool.Arrange the twine: Arrange bananas, ice cream, and sauces on plates; top with whipped cream and cherries.
