Bookmark this page

Ingredients
⅓ cup fresh lime juice
¼ cup fresh orange juice
2 tablespoons low-sodium soy sauce
2 tablespoons honey
2 garlic cloves, minced
2 teaspoons grated peeled fresh ginger
2 tablespoons sugar
1 teaspoon ground coriander seeds
¼ teaspoon black pepper
2 cobs of corn, each cut crosswise into 4 pieces
1 ½ pounds large shrimp, peeled and pitted
4 cups cooked couscous
To make
Almost without cleaning, it is very easy to cook a dish in foil on fire. Buy ready-made foil baking bags or make them yourself from strong aluminum foil. Then drop the bag directly on the coals. If you skip the couscous, pour the juice over the French bread.
At home, mix the first 9 ingredients in a sturdy zippered plastic bag and seal. Put the corn, shrimp, and couscous in separate zippered plastic bags and seal the bags. Put the shrimp in the refrigerator. When camping, put the lime mixture, corn, and shrimp in a foil roasting bag. Place directly on the hot coals (or in the oven at 450°, if at home); cook for 10 minutes. Serve with couscous.
