Beet Fritters

Ingredients
2 cups peeled, minced beets (about 2/3 pound)*
¼ cup finely chopped onion
½ cup soft breadcrumbs
1 large egg, beaten
¼ teaspoon ground ginger
¼ teaspoon salt
⅛ a teaspoon of pepper
Vegetable oil
Sour cream
To make
Combine the first 7 ingredients in a small mixing bowl; mix well.Pour the oil 1/4-inch deep into a large, heavy skillet; cook over medium-high heat until hot. Add 1/4 cup beetroot mixture to the hot oil; flatten slightly. Repeat with the remaining mixture.Cook for 4-5 minutes on each side or until tender. Dry on paper towels; top with sour cream.* Replace beets with 2 cups of peeled, chopped rutabagas.
