Blackened Yellowtail Snapper with Mango Salsa

Ingredients
1 cup diced ripe mango
½ cup fresh coriander, chopped
¼ cup chopped red onion
1 crushed jalapeno pepper
2 tablespoons fresh lime juice
2 skinless yellowtail snapper fillets (6 oz each)
1 tablespoon melted butter
2 tablespoons ready-made seasoning for roasting or dried meat
To make
Add spice to this pan-baked snapper, season with the prepared seasoning for roasting or dried meat, and top with fresh fruit salsa.
Combine the mango and the following 4 ingredients in a bowl. Cover and refrigerate until ready to serve.Brush the snapper with melted butter and brush both sides with seasoning.Preheat a large cast-iron skillet or heavy-bottomed skillet until hot. Cook the fish for 2 minutes on each side or until it is opaque. Serve with mango salsa.
