Bourbon-Cream Cheese Brownies


4 (1 oz) unsweetened chocolate cookie squares
¾ cup butter
½ cup tightly packed light brown sugar
1 ¾ cups granulated sugar, divided
4 large eggs, divided
1 teaspoon vanilla extract
⅛ a teaspoon of salt
1 cup all-purpose flour
1 (8 oz) pack softened cream cheese
2 tablespoons all-purpose flour
¼ cup bourbon

These brownies are a bourbon lover's dream. They consist of two layers of chocolate brownie batter and a bourbon-flavored cream cheese mix.
Preheat the oven to 350 degrees. Line the bottom and sides of a 9-inch square mold with aluminum foil so that the edges protrude 2 to 3 inches; lightly oil the foil.Heat the chocolate squares and butter in a large, microwave-safe bowl over high heat for 1 1/2 to 2 minutes, or until they are melted and smooth, stirring at 30-second intervals. Whisk together the brown sugar and 1 1/2 cups granulated sugar. Add 3 eggs, 1 at a time, beating until smooth after each addition. Whisk with vanilla, salt and 1 cup flour. Place half of the dough on the prepared pan.Beat the cream cheese with an electric mixer on medium speed until smooth; add 2 tablespoons flour and the remaining 1/4 cup granulated sugar to beat until smooth. Add the bourbon and remaining 1 egg, whisking until smooth.Pour the cream cheese mixture over the brownie batter in the pan; top with the remaining brownie batter and toss to combine.Bake at 350 ° C for 40-45 minutes or until a few moist crumbs appear on a wooden stick inserted in the middle. Cool completely in the pan on a wire rack (about 1 hour). Remove the brownies from the pan, using the edges of the foil as handles. Carefully remove the foil; cut into small squares.
