Ingredients

2 slices of white bread (1 oz each)
¾ teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon dried mashed sage
½ teaspoon dried thyme
8 boneless pork chops (2 ounces each) (1/4-inch thick)
¼ cup all-purpose flour
3 large egg whites, lightly beaten
2 teaspoons vegetable oil

Place the bread slices in a food processor; chop 10 times or until large, 1-cup-sized crumbs form. Pour the breadcrumbs into a shallow pan.Combine salt, pepper, sage and thyme; sprinkle pork on both sides. Pour the flour into a shallow bowl; place the egg whites in another shallow bowl. Roll pork in flour, dip in egg whites and roll in breadcrumbs. Heat the oil in a large nonstick skillet over medium-high heat. Transfer the pork to the skillet. Cook for 2 1/2 minutes or until lightly browned. Lightly brush the surface of the chops with cooking spray; turn the chops over. Cook for 2 1/2 minutes or until tender. Serve with lemon wedges.
