1 cup young spinach leaves, coarsely chopped
2 ounces shredded partially fat-free mozzarella cheese (about 1/2 cup)
¼ cup low-fat 2% milk
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

These cute little custard pies with no crust are perfect for a family dinner on the road. Prepare a serving (or two) on a Sunday night, and you'll have a light breakfast for a busy weekday morning. They are also quite versatile – they serve spinach and mozzarella, but cooked broccoli and cheddar or crispy bacon are delicious substitutes or additions. They also freeze well.
Preheat the oven to 350 degrees.Brush 6 muffin tins with cooking spray. Preheat a medium-sized nonstick skillet over medium-high heat. Add the butter; stir to coat. Add the onion; simmer for 3 minutes or until almost tender. Add the spinach; simmer for 2 minutes or just until the spinach begins to wilt, stirring constantly. Transfer the spinach mixture to a small bowl; let cool for 3 minutes. Add the cheese.Mix the milk and other ingredients, stirring with a whisk, until smooth. Add the cheese mixture. Spread the mixture evenly over the prepared muffin tins. Bake at 350 ° C for 20 minutes or until fluffy and set. (Quiche pies will deflate slightly when they cool down.) Serve warm.
