Broccoli and Double Cheese Calzones

Ingredients
1 ½ cups broccoli florets
1 large garlic clove, minced
⅔ cup of ricotta
4 ounces coarsely grated mozzarella (1 cup)
1 large egg yolk
Salt and pepper
1 pound frozen pizza dough, defrosted

Preheat the oven to 450°F. In a small saucepan, bring 1 inch of water to a boil. Place the broccoli in a steaming dish, place the steaming dish in a saucepan, cover and steam until tender, 4-5 minutes. Allow to cool slightly, chop coarsely and place in a medium bowl. Add garlic, ricotta, mozzarella and egg yolk; season with salt and pepper.Divide the pizza dough into 4 portions and use a rolling pin to roll each into an 8-inch circle. Place a quarter of the broccoli mixture in the center of the round shape, fold the dough in half, and then fasten by rolling the edges to the center and crimping. Using a sharp knife, make two small slits in the top of the calzone to release steam. Repeat with the remaining batter and broccoli mixture. Brush the calzone with olive oil.Brush a large roasting pan with nonstick cooking spray. Place the calzone on a baking sheet and bake in the center of the oven until golden brown, 13 to 15 minutes. Serve immediately, drizzle with warm tomato sauce for dipping if desired.
