Broiled Red Snapper with Ginger-Lime Butter

Ingredients
1 ½ tablespoons softened butter
1 tablespoon chopped fresh cilantro
1 teaspoon chopped jalapeno pepper, unseeded
½ teaspoon grated lime zest
¼ teaspoon bottled fresh ground ginger (for example, Spice World)
¾ teaspoon salt, divided
4 (6 oz) red snapper or other hard white fish fillet
¼ teaspoon ground black pepper
Cooking Spray
Lime wedges (optional)
To make
Serve with long-grain rice topped with green onions. Also use the herb-infused oil for shrimp, lobster, stewed chicken or beef.
Combine the first 5 ingredients in a bowl. Add 1/4 teaspoon of salt. Cover and refrigerate.Preheat a large nonstick skillet over medium-high heat. Sprinkle the fish on both sides with the remaining 1/2 teaspoon salt and black pepper. Brush the mold with cooking spray. Place the fish in the pan; cook for 3 minutes on each side, or until the fish flakes easily when tested with a fork, or until the desired degree of roasting is achieved. Place 1 fillet on each of the 4 plates and brush each serving with 1 1/2 teaspoons of the cream mixture. Serve with lime wedges, if desired.
