4 large eggs, lightly beaten
1 cup of milk
1 cup all-purpose flour
¼ teaspoon salt
⅓ cup melted butter or margarine
3 tablespoons orange marmalade
3 tablespoons butter or margarine
1 tablespoon lemon juice
1 pack frozen sliced peaches (16 oz), thawed and dried
1 cup frozen blueberries, defrosted

To make

Complete with fruit and a "pancake" according to this recipe, you do not need to serve anything else. If you want a more satisfying meal, try serving it with scrambled eggs and bacon, or thinly sliced ham.
Place a well-greased 12-inch cast-iron skillet in the preheated 425° oven for 5 minutes.Mix the first 5 ingredients, stirring with a whisk, until smooth.Remove the pan from the oven. Pour the batter into the hot pan.Bake at 425 ° C for 20-25 minutes. (They resemble a giant popover and will quickly fall off when removed from the oven.)Combine the marmalade, 3 tablespoons of butter, and lemon juice in a saucepan; bring to a boil. Add the peaches and cook over medium heat, stirring constantly, for 2-3 minutes. Spoon on top of the baked pancake. Sprinkle with blueberries.
