Buffalo Quinoa Burgers

Ingredients
7 teaspoons canola oil, divided
¾ cup finely chopped onion
½ cup finely chopped peeled carrots
3 garlic cloves, minced
¾ cup water
⅓ cup of raw quinoa
½ cup panko
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 ½ cups canned unsalted chickpeas, washed and drained
1 large egg
2 tablespoons hot sauce (such as tabasco)
4 toasted whole grain hamburger buns (1 1/2 ounces each)
4 romaine lettuce leaves
4 1/4-inch-thick tomato slices.

This is a hearty, protein-rich veggie burger that everyone will love, served with a small amount of hot sauce.
Preheat a large saucepan over medium-high heat. Add 2 teaspoons butter; whisk to coat. Add the onion, carrot and garlic; simmer for 3 minutes. Add 3/4 cup water and quinoa; bring to a boil. Cover, reduce heat to medium and simmer for 18 minutes or until liquid is absorbed. Spoon the cooked quinoa onto a large plate; let cool for 5 minutes. Combine the quinoa mixture, panko, salt, pepper, chickpeas, and egg in a food processor; beat until the chickpeas are pureed and the mixture is smooth. Form 4 quinoa patties (1/2-inch thick) from the quinoa mixture.Preheat a large nonstick skillet over medium-high heat. Add 1 tablespoon of oil to the skillet; stir to coat. Place the patties in the pan; cook for 3 minutes on each side or until they are lightly browned.Combine the remaining 2 teaspoons of oil and hot sauce in a bowl. Place the patties on the bottom halves of the buns; spread evenly with the hot sauce mixture, lettuce leaves, tomatoes, and the top halves of the buns.
