Butternut Squash with Orange

Ingredients
6 cups peeled pumpkin nuts, diced
2 ½ teaspoons olive oil
2 teaspoons butter
2 tablespoons finely grated orange zest
¼ cup fresh orange juice
¼ teaspoon salt
½ teaspoon freshly ground black pepper
To make
Saute the zucchini in olive oil in a roasting pan over medium-high heat for 2 minutes; cover, reduce the heat to low and cook for 12-15 minutes, or just until tender if you pierce them with a knife. Combine with the butter, orange zest, and orange juice; whisk in an immersion blender until smooth. Season with salt and pepper.
