Cabbage-Pineapple Slaw

Ingredients
1 can juiced pineapple slices (8 oz) without the skin
3 cups finely chopped cabbage
1 ½ cups sliced red delicious apple (about 2 medium-sized)
½ cup chopped celery
¼ cup golden raisins
¼ cup light mayonnaise
Cabbage leaves (optional)
Apple slices (optional)
To make
Drain the pineapple, reserving 3 tablespoons of juice. Combine the peeled pineapple, chopped cabbage, and the following 3 ingredients in a large bowl.Combine the remaining pineapple juice and mayonnaise; add to the cabbage mixture, stirring gently. Cover and refrigerate.Before serving, spoon the mixture into a bowl lined with cabbage leaves and garnish with apple slices if desired (cabbage leaves and apple slices are not included in the analysis).The Council: This delicious chilled salad is a cross between a Waldorf salad and a coleslaw.
