Caramelized Onion Chicken

Ingredients
Tender 1 lb chicken breasts
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 teaspoon olive oil
½ cup chopped onion
½ cup raspberry seedless jam
1 tablespoon red wine vinegar
1 tablespoon low-sodium soy sauce
1 teaspoon bottled minced ginger
½ teaspoon dried rosemary
To make
Raspberry jam, red wine vinegar, soy sauce and a couple of seasonings create a thick sauce for the chicken. This recipe is low in fat, easy to whip up, and most of the ingredients can be found in your pantry. If you do not have raspberry jam, you can make jam from red currants, apples or blackberries without seeds. Sauteed green beans will make a great side dish for this sweet, spicy chicken with onions.
Sprinkle the chicken with salt and pepper. Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and simmer for 2 minutes. Add the chicken to the skillet; simmer for 8 minutes or until the chicken is tender. Remove the onion and chicken from the pan.Add the jam and other ingredients to the pan; cook for 2 minutes, stirring constantly with a whisk. Return the chicken mixture to the pan; cook for 4 minutes, stirring occasionally.
