Caramelized Onion Marmalade

Ingredients
1 tablespoon butter
3 tablespoons brown sugar
10 cups thinly sliced sweet onions (about 4 large)
4 garlic cloves, minced
2 tablespoons red wine vinegar
¾ teaspoon salt
⅛ a teaspoon of freshly ground black pepper

Caramelized onion marmalade is a delicious filling for bruschetta or pizza; it is also a great addition to grilled rib-eye steak, chicken or pork.
Melt the butter in a large nonstick skillet over medium-high heat. Add the sugar to the pan; cook for 1 minute or until the sugar is dissolved. Add the onion and garlic to the skillet. Cover and cook for 30 minutes or until the onion is very soft, stirring occasionally. Remove the lid and add the vinegar to the onion mixture. Cook uncovered for 10 minutes or until golden brown, stirring frequently. Season with salt and pepper.
