Caramelized Onion Quiche

Ingredients
1 pack chilled slices (14.1 oz)
3 large sweet onions, sliced (about 1 1/2 pounds).
2 tablespoons olive oil
½ cup chopped fresh flat-leaved parsley
6 slices bacon, minced
2 cups (8 oz) grated gruyere cheese
1 ½ cups halved
4 large eggs
½ teaspoon salt
¼ teaspoon freshly ground pepper
¼ teaspoon ground nutmeg

Caramelized onion quiche is the perfect addition to your next brunch or lunch. Combine Gruyere cheese and bacon with caramelized onions to make an impossible-to-beat quiche. Parsley with flat leaves, green onions and mint give this delicious dish a fresh, beautiful finish.
Preheat the oven to 425 degrees. Roll out the cakes; place on a lightly oiled surface. Roll out the folded cakes into a 12-inch circle. Place the pie slices in a 10-inch-deep pie dish with a removable bottom; press down on the fluted edges. Trim off any excess crust around the edges. Cover the cake with aluminum foil or parchment paper and sprinkle with pie filling or dried beans. Place the mold on a baking sheet lined with foil. Bake for 12 minutes. Remove the mass and foil and bake for another 8 minutes. Cool completely on a baking sheet on a wire rack (about 15 minutes). Reduce the oven temperature to 350 degrees.Meanwhile, saute the onion in hot oil in a large skillet over medium-high heat, stirring frequently, for 15-20 minutes or until the onion is caramelized. Remove from the heat and add the parsley and bacon. Place half of the onion mixture in a pie dish and sprinkle half of the cheese on top; repeat with the remaining onion mixture and cheese.Whisk in half and the next 4 ingredients; sprinkle with cheese.Bake at 350 ° C for 40-45 minutes or until cooked through. Cool on a baking sheet on a wire rack 15 minutes before serving.
